Better Than Your Mom’s Chicken Soup

Ingredients
  • 8 cup low sodium chicken broth
  • 6 carrots, sliced (or 1/2 bag frozen carrot slices)
  • 2 cup chopped onions
  • 2 tbsp thyme
  • 4 clove garlic, minced
  • 3 lb chicken breast filets, cut into small bite size pieces
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 2 cup frozen corn
  • 2 cup frozen peas
  • 1 cup instant rice

    Add all ingredients, except corn, peas and rice, to the slow cooker. Cover and cook on low 6-8 hours, or until carrots are tender and chicken is done. Add corn, peas and rice the last 10-15 minutes of cooking time.
