Cheesecake Bars

Ingredients
  • 1/3 cup butter, softened
  • 1/3 cup firmly packed brown sugar
  • 1 cup sifted flour
  • 1/2 cup chopped walnuts
  • 1/4 cup sugar
  • 8 oz cream cheese, room temperature
  • 1 egg
  • 2 tbsp milk
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla

    Preheat oven to 350 degrees.

    Cream butter and brown sugar; add flour and nuts and mix to make crumb mixture. Reserve 1 cup of mixture for topping. Press remainder into bottom of 8 inch square pan. Bake for 12-15 minutes.

    Blend sugar with cream cheese till smooth. Add egg, milk, lemon juice and vanilla; beat well. Spread over baked crust. Sprinkle with reserved crumb mixture. Bake for 25 minutes.

    Cool. Cut into 2 inch squares.
