Cheesy Mashed Potato Puffs

Ingredients
  • 2 c. mashed potatoes (fresh or leftover)
  • 1 c. shredded cheddar cheese
  • 1/4 c. grated parmesan cheese
  • 2 large eggs
  • 1/4 c. milk
  • 2 green onions, chopped
  • Salt and pepper to taste

    Preheat oven to 375 degrees and grease muffin tin. Mix all ingredients together in a bowl. Scoop into the muffin tin, filling each about 3/4 full. Bake for 20-25 minutes or until golden and puffy. Let them cool for a few minutes before eating.
