Cherry Cream Cheese Pie

Ingredients
  • 8 oz cream cheese
  • 1 can (15 ounce) sweetened condensed milk
  • 1/3 cup fresh or bottled lemon juice
  • 1 tsp vanilla
  • 9-inch graham cracker crust
  • 1/2 cup cherry juice
  • 2 tbsp sugar
  • 2 tsp cornstarch

    Soften cheese to room temperature. Whip until fluffy. Gradually add milk while continuing to beat until well blended. Add lemon juice and vanilla. Blend well. Pour into crust. Chill 2 hours before putting filling on top. For filling, cook cherry juice, sugar and cornstarch until thick. Add drained cherries and put filling on the pie.
