Chocolate Cream Pie

Ingredients
    Chocolate Crumb Crust:
  • 1 1/2 cup crumbled graham crackers
  • 1/2 cup brown sugar
  • 3 tbsp cocoa powder
  • 1/3 cup melted butter
  • Filing:
  • 3/4 cup cocoa powder
  • 1/4 cup margarine, melted
  • 8 oz cream cheese, softened
  • 1/8 tsp salt
  • 1 cup light brown sugar
  • 2 eggs, separated
  • 1 tsp vanilla
  • 1 cup heavy cream, whipped

    Chocolate Crumb Crust:

    Combine crust ingredients except butter in mixing bowl. Add melted butter; blend well. Press against sides and bottom of 9-inch pie plate.

    Filling:

    Blend cocoa and butter in small bowl; set aside. In mixing bowl, whip cream cheese and salt with rotary beater or electric mixer until light and fluffy. Gradually blend in 3/4 c. brown sugar. Blend in egg yolks and cocoa mixture. Beat well. Beat egg whites with remaining 1/4 c. sugar and beat to stiff peaks. Fold into cocoa mixture with whipped cream. Spoon into prepared crust. Chill overnight.
