Chocolate Pie

Ingredients
  • 2 cup milk
  • 3/4 cup sugar
  • 2 tbsp cocoa
  • 2 tbsp flour
  • 2 1/2 tbsp cornstarch
  • 3 egg yolks
  • 1 tbsp butter
  • Salt
  • Vanilla
  • 2 tbsp cold water
  • 1/2 cup hot water
  • 1 tbsp cornstarch
  • 3 egg whites, beaten
  • 6 tbsp sugar
  • Pinch of salt
  • Baked pie shell

    Bring milk to a boil. Mix together ¾ c. sugar, cocoa, flour, 2½ T. cornstarch and egg yolks and add to milk. Cook over moderate heat until mixture thickens. Boil 1 minute. Add butter, salt and vanilla to mixture. Cool. Pour into cooled, baked pie shell.

    For meringue, mix cold water and 1 T. cornstarch and add to hot water. Boil until thick. Cool. Beat until stiff the egg whites, sugar added gradually and a pinch of salt. Add cornstarch mixture and beat until stiff, but not dry. Put on top of pie and bake about 12 minutes at 375 degrees until meringue is browned.
