Chocolate Pudding Pie

Ingredients
  • 2/3 cup sugar
  • 1/4 cup cornstarch
  • 1/4 tsp salt
  • 2 1/2 cup milk
  • 3 egg yolks, slightly beaten
  • 2 squares (1 ounce each) unsweetened chocolate, coarsely chopped
  • 1 tsp vanilla
  • 1 9-inch baked pastry shell
  • 3 egg whites, room temperature
  • 6 tbsp sugar

    In 2-quart saucepan, stir together 2/3 c. sugar, cornstarch and salt. Gradually stir in milk until smooth. Stir in egg yolks. Add chocolate. Stirring constantly, bring to boil over medium-low heat and boil one minute. Remove from heat. Stir in vanilla. Turn into large bowl; cover surface with waxed paper or plastic wrap. Cool slightly (no longer than 1 hour). Spoon filling into pastry shell. In small bowl with mixer at high speed, beat egg whites until soft peaks form. Gradually beat in 6 T. sugar until stiff peaks form. Spread over filling, sealing to edge of crust. Bake in 350 degree oven for 15-20 minutes or until slightly browned. Cool at room temperature away from drafts.
