Chocolate Raspberry Brownies

Ingredients
  • 4 squares unsweetened chocolate
  • 1 cup butter
  • 2 cup sugar
  • 4 eggs
  • 2 tsp vanilla
  • 1 1/4 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 package raspberry chocolate chips (divided)
  • Frosting:
  • 1/2 cup butter, softened
  • 4 cup powdered sugar
  • 1/4 cup milk
  • 1 tsp vanilla
  • 2 tbsp raspberry jam (preferably seedless)
  • Red food coloring (optional)
  • Chocolate Layer:
  • Raspberry chocolate chips
  • 1/4 cup butter

    Melt chocolate and butter in microwave for approximately 2 minutes. Cool slightly. Beat in sugar, eggs and vanilla. Mix well. Stir in flour, baking powder and salt. Do not overmix. Fold in 1/2 pkg. raspberry chips. Bake in a greased 9 x 13 pan for 30 minutes at 350 degrees. Brownies should be just done, not dry. Cool on rack.

    Frosting:

    For frosting, beat butter and sugar, adding milk as necessary, to make fluffy frosting (about 5 min.). Beat in vanilla and raspberry jam along with coloring if desired. Frost brownies & refrigerate 30 minutes.

    Chocolate Layer:

    Chocolate layer: Melt remaining chips with 1/4 c. butter to spreading consistency. Pour over frosting layer and spread to cover. Refrigerate to set.
