Classic Broccoli Cheddar Soup

Ingredients
  • 2 tbsp butter
  • 1 tbsp flour
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 5 1/2 cup lowfat milk
  • 1 (10 oz.) package frozen chopped broccoli (may use 1½ c. fresh broccoli instead)
  • 3 tbsp chopped onion
  • 2 cup (8 oz.) shredded cheddar cheese

    In a small saucepan, melt butter over low heat. Using a wire whisk, stir in flour, salt and pepper. Cook over low heat for 3-4 minutes. In a large saucepan, heat milk to simmering. Cook broccoli and onions in milk until tender. Add flour mixture to milk while stirring. Cook over medium heat for 3-5 minutes. Gradually add shredded cheese, stirring to melt. Soup can be pureed in a food processor or served immediately.
