Country Club Potatoes

Ingredients
  • 4 cup diced potatoes
  • 1/2 cup water
  • 1 1/2 cup cream
  • 1 cup milk
  • 2 tsp salt
  • 1/8 tsp pepper
  • 1/2 cup butter
  • 1/2 cup fine breadcrumbs
  • 1 cup shredded sharp cheddar cheese (optional)

    Peel, wash and place potatoes in 3 quart glass covered casserole. Add water. Cover and cook in microwave oven until tender, about 9 minutes. Drain water and add mixture of cream, milk, salt and pepper. Dot butter over mixture, cover and cook 8 minutes. Sprinkle on breadcrumbs and cook, uncovered, until hot, about 3½ minutes. For Au Gratin potatoes, stir in cheese until melted.
