Easy Fruit Turnovers

Ingredients
  • 1 box fillo (or phyllo) dough (found in freezer section by pie dough)
  • Butter flavor cooking spray
  • 8 oz cream cheese, softened
  • 2 can peaches in light syrup, drained and cut into chunks
  • 1/2 cup brown sugar
  • 1 tsp cinnamon

    Combine the brown sugar and cinnamon in a bowl. Mix well and set aside.

    Open the fillo dough and unroll. The dough comes in very thin sheets. With the dough lying flat on a cutting board and the long end facing you, cut it into thirds. Cut through all layers of the dough and you will have 3 stacks of rectangles. Cover 2 stacks with a clean towel and set aside. Make sure to keep covered as it will dry out quickly because it is so thin.

    Using the other stack, separate one sheet and place on your cutting board. Spray with cooking spray. Lay another sheet on top and spray again. Repeat this until you have 4 or 5 layers of dough.

    Place a few slices of peaches on the lower portion of the fillo dough, not touching the edges. Dot with about 1 tablespoon of the cream cheese. Sprinkle with a little of the brown sugar and cinnamon mixture.

    Roll up the dough like a burrito, folding outer edges under before the last turn. Place seam-side down on a baking sheet. Spray with more cooking spray and sprinkle with a little more brown sugar mixture.

    Repeat with more dough and peach mixture.

    Bake turnovers at 400 degrees for 15-20 minutes or until lightly browned on top.
