Ingredients
  • 16 oz cream cheese
  • 2 eggs
  • 3/4 cup sugar
  • 1 tsp vanilla
  • Vanilla wafers
  • Pie filling (cherry or strawberry)
  • Cupcake liners

    Cream the cream cheese, eggs, sugar and vanilla until smooth. Place 1 vanilla wafer into each cupcake liner. Cover with cream cheese mixture. Bake 10 minutes at 350 degrees. Let cool. Spoon pie filling onto each mini cheesecake. Refrigerate until serving.
