French Onion Soup Au Gratin

Ingredients
  • 1/4 cup onion, peeled and finely chopped
  • 1/4 cup celery, finely chopped
  • 1/4 cup carrot, finely chopped
  • 2 cup beef broth
  • 1 cup water
  • 1/4 tsp thyme
  • 1 small bay leaf
  • 2 tbsp butter
  • 3 cup onion, cut into 3/4 inch cubes
  • 2 tbsp butter, melted
  • 4 slices of bread, 1/2 inch thick (cut to same diameter as serving bowl)
  • Garlic salt (to taste)
  • 4 mozzarella slices, 1/8 inch thick
  • Salt and pepper (to taste)
  • Paprika (as needed for garnish)

    Combine finely chopped onion, celery, carrots, beef broth, water, thyme and bay leaf in a 2 qt. saucepan. Cover and bring to a simmer over medium heat. Simmer for 30 minutes. Melt butter over medium heat in a 2 qt. saucepan. Add onions, cover and simmer for 30 minutes. Stir occasionally. Preheat oven to 350 degrees. Brush melted butter on bread. Season with garlic salt, to taste. Bake for 10 minutes, or until golden brown. Set aside. Strain broth. Discard vegetables. Add broth to onions. Cover and continue to simmer for an additional 30 minutes. Season with salt and pepper, to taste. Pour soup into bowls. Top with toast and slice of mozzarella cheese. Place under broiler until cheese is melted and golden brown. Sprinkle with paprika and serve.
