Healthy Slow Cooker Chili

Ingredients
  • 1 lb extra lean ground beef, ground chicken or ground turkey
  • 3/4 cup frozen diced onion (or 1/2 large onion)
  • 1 tsp minced garlic
  • 1 tbsp chili powder
  • 1/2 tbsp Lawry's seasoned salt
  • 1/2 tsp onion powder
  • 1 tsp cumin
  • 1 can (15 oz.) red kidney beans (drained and rinsed)
  • 1 can (14 oz.) diced tomatoes, NOT drained
  • 1 can (8 oz.) corn kernels, drained
  • 6 oz tomato paste
  • 2 cup low-sodium beef broth
  • Salt & pepper to taste

    Heat about 2 tablespoons olive oil in a non-stick skillet over medium high heat. Cook beef, onion and garlic in the skillet until beef is no longer pink. Drain.

    Place beef mixture inside a large slow cooker. Add remaining ingredients and stir to combine.

    Cover and cook on LOW for 6-8 hours or on HIGH or 3-4 hours.

    Season with salt and pepper, to taste. Garnish with cheese and onion if desired.
