Put the egg yolks, mustard, salt and 1 t. of the vinegar in a bowl and beat at medium speed until the yolks are sticky. Then add oil, a few drops at a time, while you are beating. After you have added one-third of the oil, the mixture should be thick. You can begin adding more oil a bit faster (but not too fast). If the mixture becomes too thick to beat, add another teaspoon of vinegar. After all the oil has been beaten in, add the remainder of the vinegar. Use within a few days as homemade mayonnaise spoils quickly.
