Old-Fashioned Split Pea Soup

Ingredients
  • 1 lb (2 1/4 cups) green split peas
  • 2 1/2 qt water (2 quarts may be enough)
  • 1 meaty ham bone
  • 1 1/2 cup sliced onion (1 medium onion)
  • 1/2 tsp pepper
  • 1/4 tsp garlic salt
  • 1/4 tsp marjoram
  • 1 cup diced celery
  • 1 cup sliced carrots
  • 1 tsp parsley flakes
  • Salt to taste

    Cover peas with water and soak overnight. Drain.

    Add 2 ½ (or 2 quarts) water, ham bone, onion and seasonings. Bring to a boil and simmer 2 hours. Stir occasionally.

    Remove bone; cut off any bits of meat. Return meat to soup and add remaining ingredients.

    Cook slowly 45 minutes.
