Refrigerator Mashed Potatoes

Ingredients
  • 5 lb potatoes
  • 6 oz cream cheese
  • 1 cup sour cream
  • 2 tsp onion salt
  • 1/4 tsp pepper
  • 2 tbsp butter
Instructions

    Cook peeled potatoes in boiling salted water until tender. Drain. Mash until smooth, no lumps. Add remaining ingredients. Cool. Cover and store in refrigerator. Use any time within 2 weeks.

    To use, place desired amount in greased casserole. Dot with butter and bake in 350 degree oven until heated through, about 30 minutes. Full amount fills a 2 quart casserole.
