Chicken Chili

Ingredients
  • 2 clove garlic, minced
  • 1/2 cup diced sweet onion
  • 1 1/2 lb chicken breasts
  • 1 can (14.5 oz.) fire roasted diced tomatoes with liquid
  • 1 can (15.5 oz.) cannellini or navy beans (drained and rinsed)
  • 1 can (15.5 oz.) kidney beans (drained and rinsed)
  • 1 can (6 oz.) tomato paste
  • 1 1/2 cup fat free, low sodium chicken broth
  • 2 tbsp chili powder
  • 1/2 tsp cayenne pepper
  • 1/2 tsp cumin
  • 1/2 tsp black pepper
  • Sea salt to taste

    Combine all the above ingredients in the slow cooker.

    Cover and cook on low 8 hours in a 4-6 quart slow cooker. Spoon into bowls.

Note

Garnish with a little cheddar cheese and diced onion, if desired.

If you are not using raw chicken, just add the cooked chicken about an hour before the end of the cooking time.
