Steamed Cocoa Pudding

Ingredients
  • 1/3 cup unsweetened cocoa
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup butter
  • 1 cup flour
  • 1 tbsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla

    In large bowl, combine cocoa and sugar; add remaining ingredients and beat until well blended. Turn into a well-greased 5 cup mold. Cover mold with tight-fitting lid or aluminum foil tied around top; place mold on rack in large saucepan; pour boiling water into pan up to level of rack; cover pan tightly. Keep water boiling over low heat to steam pudding. Steam for 1½ hours. Cool a few minutes. Invert mold and serve warm with whipped cream and a sprinkling of chopped nuts or with fresh fruit.
