Stir-N-Drop Sugar Cookies

Ingredients
  • 2 eggs
  • 2/3 cup oil
  • 2 tsp lemon extract
  • 1 tsp grated lemon rind
  • 3/4 cup sugar
  • 2 cup sifted flour
  • 2 tsp baking powder
  • 1/2 tsp salt

    Beat eggs with fork. Stir in oil, extract and lemon rind. Add sugar and blend until mixture thickens. Sift together flour, baking powder and salt and stir in to egg mixture. Drop by teaspoonfuls about 2 inches apart on ungreased cookie sheet. Flatten with greased and sugared glass bottom and sprinkle a little sugar on top. Bake until light brown and remove immediately. Bake at 400 degrees for 8-10 minutes.
