Twice-Baked Potatoes

Ingredients
  • 6 baking potatoes
  • 1/2 cup sour cream
  • 1 tbsp chives, chopped
  • 4 cup water
  • 1 1/2 cup milk
  • 5 oz butter
  • 1 tsp salt
  • 1/8 tsp nutmeg
  • 1/8 tsp white pepper
  • Instant mashed potato flakes (as needed)

    Bake potatoes for 1 hour at 350 degrees. Cut in half and scoop potato out of skin. Place removed potato into a mixing bowl and add sour cream and chives. Mix well. Bring water, milk, butter and seasonings to a boil in sauce pan. Add to potato mixture. Mix well. Add enough instant mashed potato flakes to make approximately 6 cups of potatoes. Refill potato skin shells with potato mixture and bake at 350 degrees for 20 minutes.
