Whole Beef Tenderloin

  • 1 Whole beef tenderloin
  • Olive oil
  • Kosher or garlic salt
  • Pepper

    Remove silver skin and excess hard fat from whole tenderloin. Allow to rest at room temperature for 60-90 minutes.

    Preheat oven to 250 degrees. Rub tenderloin with olive oil, then generously season with kosher or garlic salt and pepper. Place on wire rack inside a baking sheet and position so tenderloin is the same thickness throughout. Insert meat thermometer.

    Bake approximately 45 minutes, until internal temperature reaches 120 degrees for medium rare. Remove from oven and allow to rest 10-20 minutes.

    While meat is resting, heat oven to 500 degrees. Before serving, bake tenderloin for 5-10 minutes to sear the edges. Slice in approximately half inch thick pieces and serve.
